Gizzards are the messengers of autumn and their nutty taste and flavor are irresistible. From mid September when cold wind begins to blow until mid November, the bones of gizzard begins to mellow. Gizzards caught from Hoecheon have clean and fresh taste and are suitable as sliced raw fish with bones.
Gizzards caught in the Yulpo coast start to fatten when cold wind blows and they taste less oily but clean. Gizzards are right in the season from mid September to winter solstice. Slice freshly caught gizzards between the backbone to taste the savory flavor of raw fish or sprinkle coarse salt to a still alive gizzard and grille to enhance the savory flavor.
